Usually in 25kg blocks or 100g bars packed 250 in a carton (for easy melting), chocolate couverture is a high quality chocolate with relatively higher cocoa butter content than normal chocolate. It is usually re-melted by the user for use as a glaze, enrobing agent, dip, for moulding, baking and garnishing. Available in 400g chip boxes.
